Chicken Soup - Good for the Soul

Today was a little chillier and the sunny Spring weather took a day off. On the food network, I saw a fancy chicken dish and it made me peckish for comfort food. This is what I threw together and I had to share it because it was so easy and delicious. This soup has a delicate flavour with a hint of spiciness.



My simple chicken soup recipe (serves 1 - ready in 50 minutes):

Ingredients
2 small pieces of chicken breast
4 plum tomatoes
1/4 of a red pepper, sliced
1/2 celery stalk, chopped
4 carrot batons, chopped
1 turnip, sliced
1/4 of a red chili
1 clove of garlic
1 bay leaf
1/4 onion, diced
1 cup of water
1/2 cup of wine
Olive Oil
Seasoning

4 steps to chicken soup
  1. Preheat oven at 220C. Season and drizzle oil on all vegetables and meat.  Roast in the oven for 20 minutes. 
  2. Cut chicken into bite sized pieces.
  3. Fry garlic, chili, red pepper, onion and celery in olive oil. 
  4. Add water and all other ingredients into the pan. You may also want to add extra salt, according to taste. Cook for 20 minutes on medium heat and then it's ready to eat. 
This is a great low fat snack, or serve with rice, pasta or noodles for a tasty meal.
